ENEA4 – Reference Materials for food quality, safety and authenticity

The OU carries out RTD&D activities to support the competitiveness and sustainability of the production systems of the food and no-food areas by developing innovative products and processes through the use of Enabling Technologies (KETs). Particular attention is devoted to the development of industrial biotechnologies (White Biotechnologies) and Process Technologies, mostly Mild Technologies, in the agrifood and bio-industrial sectors. The OU approaches allow the valorisation of biological resources, including by-products and waste, to obtain a wide range of bio-based products/processes with high added value. All activities are performed through multifunctional innovative infrastructures, equipment, facilities, and technology/service platforms, from lab-scale to pilot-scale. The OU has extensive experience in: food nutrition metrology; development and validation of analytical methods; Quality & Food Safety Systems; chemical characterisation of products and derivatives of food and no-food sectors, and materials by means of Nuclear Magnetic Resonance (NMR); production of Reference Materials for the agrifood; design and implementation of treatment processes (concentration, drying, etc.) on agro-industrial matrices; technical consulting, technological and analytical services from lab-scale to pilot-scale, demonstration and transfer of technology/knowledge to start-ups, SMEs, Big Enterprises and the public sector.
Roberto Balducchi
Is Resaerch Director at ENEA. Graduate in Biological Sciences, Specialist in Microbiology and Virology and in Clinical Pathology. Head of the ENEA “Bioprocesses and Bioproducts Laboratory”, he coordinates RST&D activities applied to food and no-food sectors. He carries out studies and RST&D activities about development of biotechnologies, KETs and Mild Technologies from lab-scale until the pilot-scale and the development of Circular Bioeconomy methods for agro-industrial and agro-food processes. He promotes the technological infrastructures of "Agrobiopolis" (Trisaia. Research Center) and the "Agro-industrial Processes" Hall (Casaccia Research Center). He is involved in national and EU projects, coordinates demonstration activities and technological transfer of research results. He is the author of about 100 articles in scientific journals, technical reports, and conference reports.
Raffaele Lamanna
Is researcher at ENEA (Trisaia Resaerch Center). With a PhD in Physics, he works on the application of liquid and solid state NMR to food and related materials. By the concurrent application of both NMR profiling and machine learning algorithms, he studies the correlation between chemical composition of foods and their territorial and botanical origin. Moreover, he studies the temporal stability of foods in connection with ripening processes and shelf-life. In addition, he works on the characterization by NMR of polymeric bioproducts and of their interaction with food when used as packaging.
Salvatore Palazzo
Is Professional Technician of Chemical Industries. He collaborated in the commissioning and currently works for the management and performance of the plant for agrifood Reference Materials and systems for their conservation. He has gained substantial operational experience with the various plant equipment, acquiring considerable ability in conducting tests and optimising processes. In particular, he has acquired the ability to: set up and perform complex phases (e.g., vacuum extraction and freeze drying); check the product specifications (e.g., water activity, particle sise); work with hardware and equipment management software; operation and management of systems and instruments (e.g., spray-dryer, falling film evaporator, industrial rotary evaporator, dryer belt, extraction unit for determining the VELP crude fiber content).
Paola Sangiorgio
Holds a Mater’s Degree in Chemistry and a PhD in Chemical Sciences. Researcher at ENEA since 2000, she works on several R&D activities, such as: production of Reference Materials for the agrifood sector; development and validation of analytical methods; design of treatment processes (extraction, concentration, drying, etc.) on agro-industrial residues to recover bioactive molecules; consultancy to the agro-industrial companies to improve their production processes and products and valorise their by-products in a Circular Bioeconomy key; Quality & Food Safety Systems; implementation of Environmental Management System and monitoring the environmental and safety aspects of chemical labs and pilot plants (ISO14001 & 45001); chemical risk assessment. She coordinates the ENEA sensory panel and management of Consumer Tests.
Alesandra Verardi
Holds a Master’s Degree in Biology and a PhD in "Environment, Health and Eco-sustainable Processes”. In 2015, she was a Visiting Researcher at KU Leuven (Belgium) working on the "Technological platform for the valorisation and recovery of organic products". From 2016-2020, she was Research Assista at the ENEA, working on the valorisation and environmental sustainability of agricultural productions. Currently, she is a Researcher at the ENEA Trisaia Research Center, where she is studying agro-industrial wastes to make products with high-added value via a circular bioeconomy approach.
